Brewery Spotlight: Noble Beast Brewing Company – Cleveland, OH
A brewpub either does great beer or good food, but never both. Cleveland’s Noble Beast would like to have a word.

A spotlight on great beer makers and the beers they brew.
“How many barrels do ya’ll produce here?”
Sitting next to us, the off-duty bartender thought for a second before answering. “No one knows. The brewers come in, they decide ‘yeah I want to make that today’ and they just go for it.”
In reality, Noble Beast is a 10-barrel nano brewpub tucked close to the Lake on the northeastern fringe of downtown Cleveland. Against one wall is the heart of the brewery with shining steel kettles and fermenters, a spaghetti of pipes and grain elevators, and brewing bits and bobs. Against the other wall, vaguely shipping container-like, is the bar and lively open kitchen. And no matter where you look, on the walls or tucked into rafters, are glimpses of Noble Beast’s personality.
Started in 2017, when Cleveland was seeing a surge of smaller breweries opening or already open, Shaun Yasaki brought his portfolio of beer experience to his own space. Previously, Yasaki got his feet wet at Fat Heads Brewery, then was the first brewer at one of the city’s greatest breweries, Platform Beer Co. Platform, sadly, is no more, but Yasaki is killing it now at Noble Beast.
And the constantly rotating beer list at Noble Beast reflects one of the best features that made the old Platform Beer Co. fun to visit weekly: slightly off-beat beers that march to their own drum and are always changing. Something bigger breweries and trend-chasers can’t do as easily.
The Beers
When we visited, we were staring down the barrel of the holiday season, with Christmas right around the corner and the barren Cleveland dark months threatening to ruin our mild evening. On tap was a welcome assortment of darker beers (and one behemoth), rather than the typical seltzer and saison fest we’ve been accustomed to lately.
Here’s what we drank:
- Embers Only – Smoked Helles lager – 4.8% ABV – 17 IBU
- Bock Bier – Bock – 6.1% ABV – 21 IBU
- Temple of Speed – Belgian Dark Strong – 8.0% ABV – 17 IBU
- CharChar – Belgian Single – 5.5% ABV – 22 IBU
- Cookies&Milk Stout – Barrel Aged Stout – 10.3% ABV
Overall the beers we chose were delicious. The bock was a good representation of the style. Toasty, dark, and easy to drink. The CharChar and Embers Only were ok, but the standout for the trip was the beast of a barrel-aged stout. Cookies&Milk was served up, fittingly, with an oatmeal cookie on the rim. It was deep, dark, heavy without being overly sweet. These are the beers that make Noble Beast shine.
In addition to those we drank, there were a few IPAs and other easy-drinking brews.
The Food
How unfair is it for a brewery to pack a small food menu so full of hits like the one at Noble Beast?
Everything on the menu has a crafted feel to it from their snacks (pork confit nachos, c’mon!) to their hand food (a proper bologna sandwich!), and looks as good coming out of the kitchen as the descriptions make it sound.
We won’t go into that here, but you can learn all about the food of Noble Beast at Vittles & Nosh.
For a quick recommendation, get the wings. Sauces, like their beers, are made in-house and have rotating selections. As spice lovers, we tried their Irresponsible wing sauce and found it…well, downright disrespectful. Just like we like it.
The Verdict
For the quick and dirty, Noble Beast in Cleveland is not just a great place to drink and eat, it is a must-stop if you are a fan of craft beer. There’s a beer here for fans of every style, unlike other (most?) breweries these days going heavy on one style or another.
Paired up with great food, crowlers to go, and a comfortable vibe, this is easily one of the best in northern Ohio.
